When thinking of a great Easter cocktail my mind immediately went to the Peter Rabbit at Searsucker, the restaurant from Top Chef alum Brian Malarkey. I have had the pleasure of going there on several occasions and each time this is the only thing I drink. I found the recipe to share with you.

Although it is a bit more complicated than a shake and serve cocktail, believe me, this refreshing and complex flavored drink is worth the extra effort.

  • 3 cups water

  • 3 cups sugar

  • pinch of salt

  • 1 tablespoon fresh basil leaves

  • 1 cup freshly squeezed lemon juice

  • 2 ounces pimm’s

  • pickled carrot (garnish)

  • fresh basil leaf (garnish)

 Make a simple syrup by combining sugar, water, and salt in a pot on medium heat and whisking until dissolved. Let simple syrup cool to room temperature.

Combine basil leaves and lemon juice in blender and blend on high for 1 minute. Strain to remove any solids from mixture.

In a shaker combine 1 ounce simple syrup and 1 ounce basil lemon mixture with 2 ounces of Pimm’s. Shake until combine and serve over ice. Add garnish and enjoy!
